Autumn is here, and with it comes a plethora of pumpkins bursting out of every grocery store, resting on every front stoop, and baking in every kitchen. The humble orange pumpkin is actually a member of the squash family, and depending on the variety you purchase, can be used in a number of ways:

Carve it! Of course, the most popular use of a pumpkin is to create a jack-o-lantern for Halloween. Pumpkin Pancakes. Like banana pancakes, pumpkin pancakes are moist, delicious and easy to whip up on a brisk Saturday morning, filling the belly before you rake leaves or take a nature walk. Roast the Seeds. After you have dug out the innards of all those jack-o-lanterns, wash the seeds in a colander, and then sprinkle with a bit of oil and seasonings like salt, pepper, chili powder and cumin. Next roast the seeds at 325 degrees for about 25 minutes or until golden brown, stirring every five minutes or so to make sure nothing burns. Just puree 2 cups of cooked pumpkin (or use canned) along with 4 cups vegetable stock, ½ cup milk, 1 tablespoon butter, 1 tablespoon Bragg’s seasoning or tamari, and ¼ cup dry milk. Pumpkin Pot of Stew! Small sugar pumpkins make cute and seasonally appropriate bowls for serving a hearty fall stew. Just cut out the top, scoop out the seeds, and rub the insides with oil and sprinkle with salt and pepper. Bake the pumpkins and their lids, right side up, for 25 minutes at 350 degrees on baking sheets lined with parchment paper. Remove lids, turn pumpkins upside down and bake another 25 minutes. Let cool and then fill with your favorite fall stew. The pumpkin provides an edible bowl and sweet-savory taste addition to your choice of stew, and looks fantastic on the table!
